Dahi vada is an old time favourite appetizer. Preparing it at home is time consuming, besides its fried too! Can't there be an alternative which is a notch down on the calories but yet chatpata? Yes, there is. This recipe of bread dumplings topped with spicy curd is a great alternative to dahi vada. The combination of bread, sprouts and peas makes it a complete protein, besides its not fried!
Bread - 4 slices
Curd ( whisked ) - 1.5 cup
For stuffing -
Sprouted moong - 1/2 cup
Peas - 1/2 cup
Cashewnuts - 8 no.
Ginger Garlic paste - 1 tsp
Green chilli paste - 1 tsp
Coriander ( chopped ) - 1 tbsp
Oil - 2 tsp
Garam masala, raw mango powder and salt to taste
For Garnishing -
Mint chutney
Dates chutney
Red chilli powder
Chaat masala
Chopped coriander ( optional )
Grind the sprouted moong and fresh green peas into a coarse powder ( do not completely powder it)
Heat oil in a pan. Add the sprouts and peas. Sprinkle some water, salt and let it cook.
Let the above mixture cool. Add all the ingredients mentioned in the stuffing . Mix well
Trim the edges of the bread and sprinkle some water.
Make a depression in the centre of bread slice for the stuffing. Place a spoonful of the stuffing and join the edges of the bread, such that you get a vada.
Place the vada in a bowl. Top it with curd and garnish.
A healthy twist to the traditional dahi wada is ready to relish.
