- Know your Food - Flavouring Substances

- Know your Ingredient- Milk Solids
‘Milk solids’ refers to the dried powder left after all the water is removed from liquid milk.
The milk powder from full-fat gives a smooth creamy texture to the finished product. Several dairy products and milk powders are reported to contain oxidized cholesterol (i.e. oxysterol) after processing. Cholesterol is susceptible to oxidation leading to the formation of oxysterols.
Some oxysterols may have potential cytotoxic, mutagenic, atherogenic, and possibly carcinogenic effects.
- Loaded with FAT
Energy available from a food is based on Carbohydrate, Fat and Protein present in it. The ideal ratio of energy obtained from these components is 65% from Carbohydrates, 20% from Fat and 15% from protein.
